Every morning starts the same way: a walk through the spice market while the stalls are still being set, cardamom and cloves stacked in hessian sacks taller than the children weaving between them. Amina buys what looks right that day, not what a recipe calls for. By evening, the catch decides the rest, usually something pulled from the water only hours before it reaches your plate.
